Made from Chardonnay grown right here in a cool spot in Paso Robles County and crafted in the Method Traditionnelle process. The 2022 EOTD Blanc de Blanc bursts with candied peach, dragon fruit, and perfumed minerals, carried on a calm ocean breeze. Freshly prepared dough floats in the background, beckoning for a sip. An assertive, energetic mousse is layered with hints of wet stone, pineapple, and baked apple. The bubbles part to reveal a subtle sweetness and lively acidity, reminiscent of ripe Clementine tangerine and poached pear. Limited to 40 cases!
